add wheelchair=* and a addr:-preset-link to shop presets

I think we should add wheelchair=* to all shop=* and a few other (amenity=pharmacy) presets. We should also add a preset link to addr:*=*.

I followed ticket:10351#comment:5 and ticket:10351#comment:10, but I think it would also be ok to use a chunk for the wheelchair. I plan to add the wheelchair to all shoops, so this will get a rework anyway.

I added wheelchair to all items with opening hours, except boundary=protected_area and amenity=bicycle_repair_station. I think it does not fit there. If you find more objects, where it does not fit, please report here. (I also thought about removing it for car_wash, horse_riding and baby_hatch, but I kept it in for now.)
