sport=climbing is also useful with open ways.

Do you have an example ? The wiki says this tag is not allowed on ways, although it is being used in taginfo, but what for ?

Sure I know quite some retaining_walls made of sandstone where people boulder. Cliffs are also mapped as open lines and might be a climbing area.

If you'll have a look at the German wiki page you will find a JOSM preset which includes ways and closedways.
