Add a drop down box for with value list: agricultural, avenue, garden, landmark, natural monument, street, urban (as presented when adding the tag in the 'tag' add key selection panel).
Question: Got many needing refreshes such a building adding roof:shape + roof:material, starting with 1 to see and learn the process.
Don't understand the wiki instructions on Custom Presets, specifically the placement of the file(s) in which case I would have provided the code lines instead, hopefully in separate file, not to loose the custom presets on next JOSM update. Running on Windows 10.

Regarding
roof:*=*, please, take a look at the external preset "3D Simple Buildings" available under Preferences -> Tagging Presets.Regarding Custom Presets the place does not matter as you need to specify the path when adding with the plus button on the right, see Add a preset from the file.
