I find many highways with a foot and/or bicycle official sign and a width of more than two metres which I tag as tracks.
Please render them like paths and foot/bicycle official (maybe with doubled colour segments for 2-coloured)

Huh? What you describe is a cycleway, or a combined/segregated cycleway and footway, and as such it's still a highway=cycleway (or =path, if you must). The "two meter rule" works only in the other direction: anything narrower than two meters (exact figure is debatable, too) can't be a track, but a footway/cycleway/path can be just about any width. Hardly any (combined) cycleway is narrower than two meters, anyway. Please, somebody, close as wont-fix.
